It's a little difficult to make this soup in Denmark....because of the ingredients and the whole crockpot cooking. But, you can easily make it in the oven, too, letting it cook all day.
Taco Soup
1 onion diced
1 15oz can great northern beans, drained and rinsed
1 15oz can black beans, drained and rinsed
1 15oz can corn drained or 2 cups frozen corn
1 8oz can tomato sauce
1 12oz can beer
2 10oz cans diced green chilies
1 pkg taco seasoning
4 skinless, boneless chicken breasts
place first 8 ingredients in slow cooker/crockpot and stir, lay chicken on top of mixture. cook on low for 5 to 8 hours. Remove chicken, shred and put back in pot.
If you like a little zippiness, add a little taco sauce after cooking.
Serve with sour cream, chips, shredded cheese, scallions, or anything else.
Thanks for the recipe mom. I added a 15 oz can of diced tomatoes, too...just because.

ReplyDeleteGlad you liked the soup, but you didn't have to drain and rinse the beans, not sure why.. Perhaps to make the broth a little thicker..
