Some days a PB&J sandwich is a welcomed comfort food. Other days, it's all about the peanut butter cookie!
This is probably the best peanut butter cookie recipe.
Peanut butter cookies

1 c. softened margarine (or unsalted butter)
1 c. softened margarine (or unsalted butter)
2 c. peanut butter
2 large eggs

1 c. sugar + more for rolling
1 c. packed brown sugar
1 tsp vanilla
1 1/2 tsp baking soda
1/2 tsp salt
3 1/2 - 4 cups all purpose flour
Optional stir-ins
1 cup chocolate chips semi/milk/dark (optional)

1 cup chopped peanuts (optional)
preheat oven to 350 (170 degrees). line baking sheets with parchment paper or silpats.
Cream butter and sugar. Add peanut butter. Cream. Mix in egg and vanilla. Add baking soda and salt. Mix in flour 1/2 cup at a time. Stir in chocolate chips and chopped peanuts (optional). Or divide dough into 3 parts and make some with chocolate chips, some plain and some with nuts.
Roll into 1" balls. Roll in granulated sugar and place on lined baking sheet. Use a fork to make a criss cross pattern on the ball.
Bake 7-8 minutes.
**Note: Once the 1" balls are slightly flattened, you can place in the freezer in a ziplock baggie for baking another day.
